Huevos Rancheros
On any given weekend at the Gaines’ house, you’ll likely find us pulling out all the stops for breakfast, which is Chip’s favorite meal of the day. I asked Chip to rank his favorites, and today we’re making his #1: Huevos Rancheros. Every bite is packed with flavor and nothing beats the taste of a fresh corn tortilla. Store-bought ones work well too, but there’s something deeply satisfying about making and pressing corn tortillas from scratch.
To balance out the meal, I’m also making Kickstart Green Juice, a favorite at our restaurant here in Waco. It’s filled with fruits and veggies and, if you’re up for it, a nice jalapeño kick. Just because breakfast is on the menu doesn’t mean we can’t save room for something sweet: Sopapilla Beignets with Vanilla Honey. These have all the sweet goodness of a sopapilla with the pillowy density of a donut.
